France, a country synonymous with food excellence, has long been celebrated for its rich, diverse cuisine. However, for those following a vegetarian or vegan diet, the options have historically been limited. The upcoming 2024 Paris Olympics is set to challenge this tradition by introducing a predominantly plant-based menu.

Philipp Würz, head of food and beverages, acknowledged the initial surprise that greeted the proposal of a 60% plant-based menu for the games. France’s consumption of vegan food lags behind many of its European neighbors, making this decision particularly groundbreaking. Würz explained that the initiative aligns with the committee’s ambitious goal of reducing carbon emissions by 50%. This objective not only focuses on reducing food miles by sourcing 80% of the ingredients from within France but also entails cutting down on red meat consumption.

To keep the food miles low and maintain freshness, menus will be tailored to specific venues. For instance, La Concorde in Paris will boast a completely plant-based 15-dish menu, showcasing the potential of plant-based cuisine on a grand stage.

The Olympics Planning Committee views this initiative as an opportunity to set a global precedent. Würz emphasized, “We want to act as a role model. If the largest sporting event on the planet can commit to serving 60% plant-based food, any event can.” The decision to trial this initiative at a venue showcasing pioneering Olympic sports underscores the symbolic importance of leading by example in sustainability.

Despite France’s growing interest in vegetarian and vegan cuisine, progress has been gradual. The closure of Ona, the only vegan Michelin-starred restaurant, just a year after receiving its award, underscores the challenges faced by plant-based eateries in the country. Currently, France boasts only one Michelin-starred vegetarian restaurant. However, the Gault & Millau guide’s listing of 95 exclusively vegetarian or vegan restaurants highlights a growing acceptance and interest in plant-based dining.
