When you hear the term “sprouted” the image of small green “sprouts” probably comes to mind. While this is partially true, you can actually buy a variety of nuts and seeds that look just like nuts and seeds, yet they have something very special and powerful within them.

If a plant is allowed to sprout before it’s harvested, a few different nutritious things take place.

First off, that sprouted seed is actually lower on the glycemic index than its counterpart that was not allowed to sprout. How does this work? When seeds are allowed to sprout, they use a large amount of stored glucose — also known as sugar — as an energy source in order to make that whole “sprouting” happen. This means that the end product has utilized its glucose reserves leaving that seed, nut, or grain with a lower glucose content.

Secondly, sprouted foods pack more of a punch when it comes to nutrient density. The naturally occurring sprouting process allows the hard shell of the seed to break open, releasing and retaining more protein, healthy fat, and minerals. In the end, your sprouted seed has a higher nutritional value than the seed that hasn’t been allowed to sprout.

Lastly, sprouted foods are generally easier on our digestive system, which is great news for those of us that usually have a hard time eating processed grains and gluten. This is not to say that sprouted grains are gluten-free, but this does mean that if you just can’t live without gluten, going sprouted may help with your digestive discomfort a bit. It all comes down to the shell, that I mentioned. When a seed is harvested before it sprouts, the shell remains intact, which is difficult for our digestive system. Alas, once that seed has sprouted, the shell will crack and be discarded and your digestive system will thank you!
