Ask any plant-based lover of food, and they’ll rush to assure you that cauliflower is having its heyday. Not only can the flower veg transform into a panoply of different culinary delights (such as vegan alfredo sauce, rice, and vegan pizza crust, to name a few) but some are even branding it as the new kale. Needless to say, if you aren’t cooking with cauliflower, now is the time to start.

These oven-fried cauliflower nuggets are guaranteed to be the star of your dinner night.

To make these nuggets, Nicole used one head of a cauliflower cut into florets, one and one-half cups of flour, two teaspoons of garlic powder, two teaspoons of black pepper, one teaspoon of paprika, one tablespoon of salt, five tablespoons of coconut oil (plus some extra), and one cup of almond milk.

Simply reheat the oven to 400°F, and put the coconut oil on a baking sheet and place in the oven for a few minutes to melt. Remove from oven and make sure it is spread evenly. Next, put the flour, garlic powder, black pepper, paprika, and salt in a large bowl and mix. In another bowl, pour the almond milk. Working a few at a time, dip the cauliflower in the milk and then coat well with the flour mixture. Put all the florets in a single layer on the baking sheet. Bake for about 15 minutes. Flip the cauliflower, brushing the extra almond milk on any floury spots on the cauliflower. Add a bit more coconut oil to the pan if it’s dry. Bake for an additional 15 minutes. Finally, cool on a paper towel and serve with dipping sauces like ketchup, and enjoy!
