A team of Croatian students has created a sustainable vegan cake from agricultural waste ingredients in Support of Croatian farmers.

Named Zdravko, the vegan cake is made from potato peel powder and industrial hemp seeds along with dried figs and carob.

The cake was made from the highly usable agricultural waste that is thrown out by farmers from their crops. This waste is often edible and full of nutrition but has no specific purpose.

The students said, “We agreed that potato peelings, but also industrial hemp cake, are exactly what we want to work with because, in addition to being unjustifiably rejected, they’re quality foods rich in fiber and minerals that have a positive effect on human health. Hemp bread has already started appearing on store shelves, but potato peelings also have undiscovered potential. Sustainability is an imperative of the modern food industry that we must turn to as soon as possible.”

The team’s creation was so innovative in regards to reducing waste and creating a sustainable food product that they won the Ecotrophelia Croatia 2021 in Zagreb, which was started to encourage students to create innovative food ideas and products.

With more creations like this, we could soon turn many of the world’s largest amounts of waste into edible food products. Especially since they are usually very healthy and full of nutrition that is not being tapped into.
