Popular restaurant chain, Bareburger has plenty of plant-based options, including the Impossible burger, Beyond Meat burger, and more! Now, they’ll be adding a vegan egg to the menu! A plant-based egg alternative is a great option for consumers looking for a healthier alternative to eggs. Egg consumption has been linked to cardiovascular disease and higher cholesterol levels.
Meanwhile, the vegan JUST egg, which will soon be on Bareburger menus is “made from an isolated protein in the 4,400-year-old mung bean.” Chicken eggs, on the other hand, are not only linked to diseases, but they’re infamous hosts for contamination. Even egg whites, which some people believe are healthier than the yolk, carry bacteria and can cause biotin depletion.
The two menu items that will include the plant-based JUST egg are “The Wake Up Call,” which pairs it with a Beyond Meat quarter pounder and “Get on Up,” which includes home fries, guacamole, black bean salsa, baby spinach and organic garlic aioli in a flour tortilla.
With fast food chains and popular restaurants adding so many plant-based options to their menus, it’s exciting that even something as complicated to replicate as eggs will also be available in healthier, plant-based forms.

You can also prepare the batter and the sautéed veggies the night before eating, then all you have to do is turn on the oven when you wake up. The muffins will rise high (as a good soufflé) and then will slowly start to sink, so get them to the table as quickly as possible. They are still delicious the next day even cold, but they won’t look that pretty anymore. The leftovers can be used as a yummy sandwich spread.
