How to Prepare Twix Bars [Vegan]
- Preheat the oven to 350°F (175°C). Line a 9 x 9–inch (23 x 23–cm) baking pan with parchment paper, then lightly oil it with your oil of choice.
- To make the cookies, add the chickpeas, tahini, agave, vanilla, baking powder, baking soda and salt to a food processor and blend until smooth with no clumps, about 4 minutes.
- Pour the mixture into the prepared baking pan and spread it out so it fills the pan. Bake for 18 to 20 minutes, until a toothpick inserted in the center comes out clean.
- Put the pan in the fridge to let the cookie cool for 5 to 10 minutes.
- Spread 1/2 to 3/4 cup (120–180 ml) of the caramel on top of the cookie and return the pan to the fridge for 30 minutes.
- Remove the cookie from the fridge and cut horizontally, then vertically to make bars.
- Add the chocolate and coconut oil to a microwave-safe dish and microwave in 30-second increments (mixing until smooth each time). Drizzle on top of the bars until all are completely covered, then top with flaky salt.
- Put the bars in the freezer for 10 minutes until the chocolate is set, then enjoy!
