    Ingredients You Need for Peanut Butter Cookies [Vegan]

    • 2 cups creamy peanut butter
    • 1 cup (200g) packed light brown sugar
    • 1 cup (200g) granulated sugar
    • 2 flax eggs-2 tablespoons ground flax meal and 6 tablespoons water, mixed and chilled at least 30 min.
    • 2 teaspoons baking soda
    • 1/2 cup oat flour or oatmeal ground to flour

    How to Prepare Peanut Butter Cookies [Vegan]

    1. Start by preparing the 2 flax eggs-For each egg, mix 1 tablespoon very finely ground flax meal and 3 tablespoons water; chill in fridge for at least 30 minutes.
    2. Heat oven to 350° F. Combine all ingredients. Shape the dough into 24 balls. Flatten
    3. slightly with crossed tines of a fork.
    4. Bake for 12-14 minutes. Let cool slightly on cookie sheets. Carefully remove to a coolingrack. They will be a bit fragile until cool.
