Black-Eyed Bean Meatballs [Vegan]

Ingredients

  • 1 cup (200g) raw black eyes
  • 3/4 cups (90g) cashews, ground into powder
  • 3 cloves garlic, melted
  • 2 tablespoons nutritional yeast
  • 1 small onion, finely chopped
  • 1 + 3 tablespoons olive oil
  • zest from 1 small lemon
  • 2 tablespoons fennel or basil, finely chopped
  • salt and pepper

Preparation

  1. First, soak the beans overnight and then the next day, strain them and add them to a blender.  Blend until a smooth paste.
  2. Transfer them to a bowl. Add the fennel, garlic and then the cashews and the nutritional yeast and mix together. Once mixed, add 1 tablespoon of oil and lemon zest. Cover with foil and put the dough in the fridge for 1 hour.
  3. Then, take it out and shape it into meatballs.
  4. Heat the remaining oil in a non-stick pan and "fry" them for a few minutes on both sides until golden brown. They fit perfectly in a pita or along with pasta or accompanied by a salad and a nice dip.
