Got any plans for November? You do now! We just recently shared the exciting news that Los Angeles-based celebrity chef, Matthew Kenney, opened up a vegan restaurant in London’s Shoreditch district. Now the famous chef is debuting yet another an all-vegan restaurant in the Big Apple called XYST, or Exist, that will feature Mediterranean inspired cuisine and cocktails.

Kenney is known for such successful businesses as Plant Food and Wine (which has multiple locations across the U.S.) and Double Zero, an all vegan pizza restaurant in New York. According to Eater New York, XYST will be an 80-seat restaurant, serving up delicious items such as Tunisian-spiced squash with curry leaves and wild mushroom fattoush, located in Chelsea. XYST will also serve juices and smoothies. XYST is slated to open this November, but we’re already drooling!

Eating plant-based meals when dining out is no longer the fringe trend it once was, thanks to compassionate chefs like Kenney. A recent study revealed that nearly 40 percent of Americans are choosing to avoid meat entirely when eating out at restaurants and are picking plant-based options instead!

Cheers to a new restaurant that will, hopefully, encourage more folks to try plant-based foods. Like Kenney says, food doesn’t have to be bad for you to taste good.
