According to UC Davis Health, people living with anxiety disorders may have lower levels of choline, an essential nutrient crucial for brain health. The study, published in Molecular Psychiatry, examined data from 25 studies and found that individuals with anxiety had about 8% less choline in the prefrontal cortex — the brain region that helps regulate mood, behavior, and decision-making.

Researchers used a noninvasive imaging method known as proton magnetic resonance spectroscopy to analyze brain chemistry across more than 700 participants. The consistent pattern of reduced choline points to how nutrition and mental health may be more deeply connected than once thought.

Choline plays a key role in forming cell membranes and producing acetylcholine, a neurotransmitter that supports memory and mood regulation. Although the body can make small amounts naturally, most choline must come from diet. Animal-based foods like eggs and fish contain it, but plant-based options such as soybeans, quinoa, broccoli, and seeds also provide valuable sources for those following a vegan or plant-based lifestyle.

Senior author Richard Maddock noted that while more research is needed to confirm whether increasing choline intake can directly reduce anxiety, maintaining a balanced diet is vital for both physical and mental well-being. Given that most Americans already fall short of the recommended choline intake, this study highlights another reason to eat nutrient-dense, whole foods that Support both the mind and the environment.

Our brains depend on what we feed them. By choosing plant-based meals rich in essential nutrients like choline, we can nurture not just our own health, but also a more compassionate relationship with the planet and all living beings.
