A new study from North Carolina State University has uncovered surprising effects from a common breakfast staple: egg whites. According to research published in The ISME Journal and reported by SciTechDaily, the type of protein you consume can dramatically reshape your gut microbiome—possibly for the worse.
In a controlled experiment, researchers fed mice single-protein diets—ranging from egg whites to brown rice, soy, and yeast—to observe how each protein influenced gut bacteria. What they found was eye-opening: not only did each protein cause the microbiome’s composition to shift, but some—including egg whites—led to drastic changes in microbial function.
One of the most concerning findings was that an egg white diet triggered gut bacteria to produce enzymes that break down glycans, which are also found in mucin—the protective lining of the gut. Essentially, the same enzymes that digest egg white proteins may also begin attacking the gut’s own protective barrier. This could increase the risk of gut inflammation or other intestinal issues, though more research is needed.
Lead author Alfredo Blakeley-Ruiz noted, “In the egg white diet, one bacterium took over and activated a bunch of glycan-degrading enzymes,” raising concerns about possible damage to the gut lining. This unexpected microbial activity adds to growing questions about how animal proteins affect our health beyond just calories and macronutrients.
While the study was conducted on mice and used simplified diets, the researchers hope it sparks further investigation into how our everyday food choices shape long-term gut health.
