We love hearing news like this – power to all the plant-based chefs, cooks and bakers out there who help make meat, egg and dairy-free cuisine part of the everyday consciousness of consumers. More and more these days, people are giving vegan treats a shot and realizing they’re just as tasty (if not more so!) than their original counterparts.
Kristi Touchette, a go-to baker for Maine vegans who need wedding or special occasion cakes, is the mastermind behind Ahimsa. She bakes from her certified kitchen in Auburn, Maine, concocting everything from traditional to crazy-cool custom creations.
She can make fun creations and cupcakes, too!
The idea of baking cakes without eggs or dairy is not new to today’s vegan trend. During the Great Depression, items like eggs and milk were coveted and many people had to do without those “luxuries.” So, people devised cake recipes sans egg and milk, and they passed them down through generations with names that didn’t do the recipes justice. In 2014, instead of a “Depression Cake” or “War Cake,” we like to think of a vegan cake as just a “It Makes Sense Cake.” We know that vegan cakes taste great and waste less precious resources than the egg and milk industries!
Cakes without eggs and dairy are no longer a sign of missing out on luxury foods. Now, they ARE the luxury foods! They’re so luxurious that even non-vegans clamor to get a piece. Most of Touchette’s customers aren’t even vegan! “I have maybe 1 or 2 percent vegan customers,” she said to the Press Herald.
