  • Salt and pepper, to taste
  • Your favorite bread

For the Optional Toppings:

  • Onions
  • Tomato

How to Prepare Thai Green Curry Salad Sandwich [Vegan]

  1. Combine chickpeas, Thai green curry paste, and vegan mayonnaise in a bowl. Season with salt and pepper to taste, then just mash with a potato masher. Make sure you leave some texture. Fold in the mango cubes and crushed salted cashews.
