Protein-Packed Vegan Salad, with Quinoa, Chickpeas, Lime and Cilantro

There is a saying that goes, if you build it, they will come.My philosophy with my children and healthy eating is that – If you cook it, they will learn.

Quinoa and Chickpea Salad with Lime and Cilantro

This Recipe is :

Cook Time



  • 1 cup cooked chickpeas (preferably, homecooked with no salt)
  • 1 cup (about 1 large seedless english cucumber), diced cucumber
  • 1 red onion, finely diced
  • 1 medium sized tomato, diced (about 3/4 cup)
  • 1/3 cup minced, fresh cilantro
  • 2 tablespoons minced fresh mint
  • 3/4 cup cooked quinoa
  • Salt to taste
  • 1/2 teaspoon red cayenne pepper
  • 3 tablespoons extra-virgin olive oil
  • 11/2 fresh limes


  1. Place the chickpeas in the mixing bowl.
  2. Mix in the cucumber, red onion and tomato and stir well.
  3. Add in the cilantro and mint and stir in the quinoa.
  4. In a separate mixing bowl, add in the salt, red cayenne pepper, extra-virgin olive oil.
  5. Squeeze in the lime juice and mix well.
  6. Pour the dressing onto the salad and let the salad rest for 15 minutes before serving.






Firstly, how dare you? But if I must, as a yogini, I find myself often pondering life and the cycle it follows for all of us. We're all interconnected. For example, when I see a squirrel happily scampering up a tree, a chain reaction begins in me that causes me to lose my ever loving mind. But then, you throw me a ball, and I'm like OMG! You see? Connections. Bottom line, I hold degrees in cuddling and belly rubs from UC BARKley and HOWLvard respectively, which makes me an expert in being the happiest being ever. I run a tight ship here and only offer kisses and snuggles to those that help my fellow furry-bottomed soldiers out on the field. Namaste.

I made this and it smelled delicious but the taste was VERY BITTER. Something must be wrong with the measurements in this recipe, and I can't figure out whether it is too much cilantro, onion or lime juice. I would love clarification on whether "1/3 cup minced, fresh cilantro" should have been "1/3 cup fresh cilantro, minced"- that may have made the difference. EDITORS, please help!! There have been 2.3K shares, and I can't find one comment from anyone who followed the recipe.
