The perfect Sunday soup! I walked to the farmers market in my neighborhood, bought a bunch of veggies, threw them in the crockpot, read the paper/took a nap – and a few hours later dinner (for the week) was ready!

Crockpot Coconut Curry Lentil Soup [Vegan, Gluten-Free]

Ingredients

  • 3 cups celery, chopped
  • 5 carrots, chopped
  • 1 large onion, chopped
  • 1 cup red lentils
  • 1/2 tablespoon ginger powder
  • 1 tablespoon curry powder
  • 1 tablespoon cumin
  • 1 tablespoon tomato paste
  • 3 cups vegetable broth
  • 1 can light coconut milk

 

Preparation

  1. Combine all the ingredients into a slow cooker and heat on high for 5-6 hours. Add salt/pepper to taste and garnish with parsley.
