Ingredients You Need for Caramel Rice Crispy Squares [Vegan]

  • 1 package vegan marshmallows
  • 1 box rice crispies
  • 2 tbsp coconut oil
  • 1 tsp vanilla
Coconut Caramel Topping:
  • 1 cup coconut sugar
  • 3/4 cup coconut cream
  • Pinch of salt
  • 1 tsp vanilla

How to Prepare Caramel Rice Crispy Squares [Vegan]

  1. In a large sauce pan, melt the coconut oil and then add the marshmallows and vanilla.
  2. Add the rice crispies and stir until combined.
  3. Spread the mixture into a parchment paper lined tray, using damp hands to spread around until you achieve a flat layer of crispy treat.
  4. Refrigerate for at least an hour.
For the Coconut Caramel Topping:
  1. In a medium saucepan, stir coconut sugar over medium heat until it liquifies. (You can add a little water if you want. This helps prevent burning.)
  2. Once the sugar gets very thick, add the salt and coconut cream. Keep stirring until it thickens up again.
  3. Remove from heat and let cool for 2-3 hours.
  4. Drizzle over the top of the cooled crispy treats and enjoy!
