For the Sandwich:

  • 4 slices of sandwich bread of choice
  • 2 boiled potatoes
  • 1 cucumber
  • 1 tomato
  • Lettuce leaves (optional)
  • Vegan butter
  • Vegan cheese slices
  • 1 pinch of chaat masala or garam masala

For the Cilantro Chutney:

  • 1 bunch cilantro
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1/4 cup grated coconut (optional)
  • 3/4 inch piece fresh grated ginger
  • 1/4 teaspoon ground cumin
  • Mint leaves (optional)
  • 1 teaspoon of agave syrup
  • 1 teaspoon of salt

How to Prepare Bombay Potato Sandwich With Cilantro Chutney [Vegan, Gluten-Free]

  1. Peel and cut the potatoes into slices. Then cut the cucumber and sliced tomato.
  2. To prepare the chutney, finely chop the coriander (it's better to cut the stems to obtain a softer texture) in a bowl with the water and lemon juice. Add the rest of the ingredients and grind a little more until a paste is formed.
  3. Spread bread slices with the vegan margarine and cilantro chutney. Put the sandwich on top of slices of cucumber, potatoes, and tomato with a few slices of cheese. Sprinkle with chaat masala or garam masala. Cover the sandwich with another slice of bread smeared with margarine and cilantro chutney. You can make a two-story sandwich by placing a slice of bread in the middle.
  4. You can put the sandwich on a griddle or sandwich maker and serve it with more chutney to taste.
