Recipe: Vegan Candy Corn
Ahh, Halloween.

It’s a fun, fun time. And candy is just a part of the costumes, parades,  and general merriment. But for us vegans, missing out on the sweet stuff can feel like a bit of a bummer.

So I say, why miss out?

Candy corn has always been a favorite of mine. So when I came across a great recipe that is suitable for vegans, I jumped on board. And I was pleasantly surprised to find that not only is the end result delicious, but it’s fun! Making these candies by hand means you can get creative with shapes and colors. You now not only have a great vegan alternative to the classic candy, but a fun Halloween activity on your hands!

adapted from the Urban Housewife

Ingredients

  • 1 cup sugar
  • 2/3 agave nectar
  • 5 tablespoons Earth Balance
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar
  • 1/3 cup powdered soy milk
  • a pinch of salt
  • Red & yellow food coloring

Preparation

  1. In a large saucepan, bring the sugar, agave, Earth Balance, & vanilla to a LIGHT boil over high heat.
  2. Reduce the heat to medium & boil the mixture for 5 minutes, stirring occasionally.
  3. After 5 minutes, remove from heat. DO NOT OVERHEAT, or your dough will be rock hard and completely useless!
  4. Sift the powdered sugar, powdered soy milk, & salt into medium bowl. Add the dry mixture to the pan, and mix well. Let the mixture stand until slightly warm to touch, about 20 minutes. Knead until smooth.
  5. Prepare a surface of wax paper. Divide the dough into 3 equal pieces.
  6. Add several drops of yellow food coloring to one piece of dough & knead food coloring into the dough until smooth and color is even. Repeat using red & yellow food coloring (for orange) with the second piece & leave the last piece white, but knead it until smooth.
  7. Roll each piece into ropes of equal length (don’t roll too thin or the dough will break) and push the three ropes together to form a long rectangle.
  8. Using sharp knife, cut the ropes into triangles. You can make any shape you want… I love my tie dye hearts!
