Ingredients You Need for Zoodles With Chunky Hemp Marinara Sauce [Vegan]

For the Marinara Sauce:

  • 1 cup sun-dried tomatoes, soaked
  • 1 red pepper
  • 5 basil leaves
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons hemp hearts
  • 1 tablespoon brown rice vinegar
  • 1 tablespoon agave syrup
  • 2 teaspoons oregano
  • 2 garlic cloves
  • A pinch of cayenne pepper
  • A dash of salt

For the Zoodles:

  • 2 large green zucchini, spiralized

How to Prepare Zoodles With Chunky Hemp Marinara Sauce [Vegan]

To Make the Marinara Sauce:

  1. Soak sun-dried tomatoes for 15-60 minutes, then drain and rinse.
  2. Put all ingredients except hemp hearts in a food processor and process until a chunky sauce consistency forms.

To Make the Zoodles:

  1. To make zucchini noodles use a spiralizer or vegetable peeler to create ribbons.
  2. Mix approximately 2-4 tablespoons of marinara sauce with zucchini noodles, garnish with hemp hearts, and serve.
