For the Meatballs:

  • 1 15-ounce can chickpeas, rinsed and drained
  • 1/2 cup peanut butter
  • 1/4 cup tamari
  • 1/4 cup cilantro
  • 1 garlic clove
  • 1 teaspoon minced ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup peanuts, roasted and salted
  • 1/4 cup chives, chopped
  • 1/2 cup panko

For the Sauce:

  • 1/3 cup peanut butter
  • 1/3 cup tamari
  • 2 tablespoons coconut oil
  • A dash of red pepper flakes

How to Prepare Thai Meatballs With Spicy Peanut Sauce [Vegan]

  1. Mix all meatball ingredients in your food processor until the mixture is relatively smooth.
  2. Form this into 1-inch meatballs.
  3. Place them on a sprayed pan and bake for 15 minutes.
  4. While they cooking, mix the spicy peanut sauce ingredients in a bowl or on a stovetop. If you want a thinner sauce, add a more coconut oil.

  1. this is a pretty tasty recipe, but it’s missing the oven temp! I did 375 for 20 minutes, flipping halfway thru. I also would’ve gone with a little less tamari in the sauce, and definitely the low sodium version. I added Sriracha to the sauce also to kick it up a couple notches
