Ingredients You Need for Raw Apple Bars [Vegan, Gluten-Free]

  • 1 cup hazelnuts
  • 1/3 cup chia seeds
  • 1/3 cup flaxseeds
  • 2/3 cup pumpkin seeds
  • 2 small apples, chopped
  • 1 + 1/3 cup raisins

How to Prepare Raw Apple Bars [Vegan, Gluten-Free]

  1. Chop the nuts and seeds in a food processor until you get a mixture resembling fine crumbs.
  2. Add apples and raisins and pulse until everything starts to stick together.
  3. Then scoop into a quick bread pan (I have a 31x11 cm bread pan, which is about 12x4 inches) or any other pan you prefer lined with parchment paper and press the mixture in evenly with a spoon.
  4. Refrigerate for at least two hours for easier portioning, cut into bars and enjoy!

Notes

The recipe makes 8-10 bars, depending on desired size of each bar. They keep well in a refrigerator for up to four days or in the freezer for up to 2 months

  1. Made these for a function, they were extremely bland as is. I had to remix everything up with some spices (cinnamon, nutmeg and ginger) and a light raw sweetener just to get them to taste halfway decent. Not worth wasting expensive raw hazelnuts over.

    1. Sorry to hear that Beth! I replied to your comment over on the blog and my FB page – I guess it might depend on the apples used otherwise I have no clue. Mine were very full-flavored and even my test testers liked them. Spice addition sounds great though and dates would surely add more sweetness. Thanks for the feedback, I really appreciate it!
