Ingredients You Need for Raw Cauliflower Mashed Potatoes [Vegan, Raw]

  • 2 cups cauliflower florets
  • 1/2 zucchini peeled
  • 1/4 cup cashews soaked for 2 hours
  • 2 tablespoons nutritional yeast
  • 1 clove garlic minced
  • 1/2 lemon juiced
  • 1 teaspoon dried herbs of your choice e.g. thyme, parsley, rosemary etc.

How to Prepare Raw Cauliflower Mashed Potatoes [Vegan, Raw]

  1. Blend all the ingredients together in a food processor, for a good few minutes, until the texture is creamy and resembles mashed potatoes.
  2. You may need to add a tablespoon of water to help with the blending process. Don't add more than one or two, as it will end up too watery.
