Ingredients You Need for Plum Frangipane [Vegan]

  • 1.3 pounds ripe plums
  • Vegan puff pastry
  • 1 1/2 cups ground almonds
  • 1/2 cup, plus 2 3/4 tablespoons golden caster sugar
  • 1/3 cup vegan butter
  • 1 chia egg (1 tablespoon ground chia seeds, plus 3 tablespoons water)
  • 1 tablespoon plain flour
  • 1 teaspoon vanilla extract

How to Prepare Plum Frangipane [Vegan]

  1. Make the chia egg by mixing 1 tablespoon of ground chia seeds with 3 tablespoons of water. Mix well and set aside.
  2. Preheat the oven to 400°F.
  3. Remove stones from plums and cut into quarters.
  4. Roll out puff pastry to fit a tart tin with an approximatively 12.2-inch diameter.
  5. Make filling by mixing together ground almond, sugar, butter, chia egg, vanilla extract, and flour. Blend until the filling is spreadable.
  6. Spread filling evenly on top of pastry.
  7. Arrange quartered plums evenly on top of filling.
  8. Cook for around 30 minutes until golden.
  9. Cool completely before serving.
