    Peanut Butter Chocolate Baked Oatmeal [Vegan]

    This vegan baked oatmeal with peanut butter and chocolate is so good, it's hard to tell if it's dessert or breakfast.

    Ingredients You Need for Peanut Butter Chocolate Baked Oatmeal [Vegan]

    • 2 bananas, mashed
    • 1/4 cup maple syrup
    • 1/4 cup peanut butter
    • 2 teaspoons vanilla
    • 2 flax eggs
    • 3 cups of oats
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 3 cups of plant milk
    • 1/2 cup - 1 cup dark chocolate

    How to Prepare Peanut Butter Chocolate Baked Oatmeal [Vegan]

    1. Preheat oven to 350°F and grease a 9x13 inch baking dish.
    2. In the dish, mash the bananas till well combined and add in the maple syrup, peanut butter, vanilla and flax eggs.  Stir till combined.
    3. To the dish, add the oats, baking soda, salt and plant milk. Stir till there are no clumps and a smooth consistency has developed.
    4. Top with chocolate before baking.
    5. Bake in the middle rack for 28-35 minutes.  If you want more oatmeal like consistency, bake for less time.  You want more of a bar texture bake a bit longer.  You can eat immediately or after cooling.
    6. Enjoy them with fresh berries and bananas.
