    Ever wanted to make you're own healthier version of this classic treat? Now you can! Hey, these are gluten-free, dairy-free, vegan, oil-free, and pretty close to being refined sugar-free. You could probably get away with simply using cashews and maple syrup if you want though.

    Ingredients You Need for Oatmeal Cream Pies [Vegan, Oil-Free, Gluten-Free]

    Cookies:

    • 1/4 cup unsweetened natural almond butter you can replace with any nut butter
    • 1/4 cup coconut cream
    • 1/2 pure maple syrup
    • 1/2 cup coconut palm sugar or raw cane sugar
    • 1/2 teaspoon salt
    • 1 teaspoon vanilla extract
    • 2 teaspoons baking powder
    • 2/3 cup blanched almond flour
    • 1 cup gluten-free oat flour
    • 2 cup old-fashioned oats
    • 2 cup quick-cooking oats

    Frosting:

    • 3/4 cup cashews soaked
    • 2 tablespoons pure maple syrup
    • 2 cups organic powdered sugar
    • 1/4 cup coconut cream
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon salt

    How to Prepare Oatmeal Cream Pies [Vegan, Oil-Free, Gluten-Free]

    1. Preheat oven to 350ºF. Mix coconut cream, nut butter, coconut sugar, and maple syrup until combined. Add vanilla, salt, and baking powder. Mix in almond and oat flour, then oatmeal.
    2. Roll dough into 1 1/2 tablespoon-sized balls, place evenly apart on a parchment-lined baking sheet, and flatten with palm because these cookies don't spread.
    3. Bake for 8-10 minutes or until edges are golden.
    4. Remove and cool completely.
    5. Whisk together ingredients for frosting in a medium bowl until smooth.
    6. When cookies are cool, use a knife to spread frosting between sets of 2 to make cream pies.
