How to Prepare No-Bake Banana Coconut Cream Pie [Vegan]

  1. First, make the crust. In your food processor, chop the dates until they are finely chopped. Next, add the remaining ingredients until they are the consistency of dirt. Press the mixture into a 9-inch pie pan.
  2. Next, puree all the ingredients of the filling in your food processor. Once it is nice and smooth, pour the mixture onto the crust.
  3. I sprinkled a little extra shredded coconut and cocoa powder on the top of pie. It made me feel so professional!
  4. Let it set in the freezer for about an hour before cutting. You can leave it in there longer, but let it thaw for 15-20 minutes so it is easier to cut into.
