Guacamole is already great with just avocado, onions, lime juice, & cilantro - however, the addition of tart mango and pomegranate seeds gives this simple dip another type of dimension.
Mango Pomegranate Guacamole [Vegan]
- 2 ripe avocados, peeled, pitted, halved and then scooped out
- 1/2 onion, finely diced
- 1 red thai chili, finely diced
- juice of 1 lime
- 1/2 cup pomegranate seeds
- 1 mango peeled and cubed
- 1/4 cup of finely chopped cilantro
- salt/pepper to taste
- Just put everything in a bowl and mix! If you want, mash the avocados. Eat with chips. Repeat.
