This sandwich has got it all – a hearty roast Maitake mushroom, a creamy pumpkin hummus, and a thick french onion dipping sauce. The recipe takes a bit of prep but it's well worth the trouble for this decadent, sandwich.
Maitake Mushroom Sandwich With French Onion Soup Dip [Vegan]
Ingredients
For the Hummus:
- 4 tablespoons pumpkin
- 1 tablespoon cumin
- 2 tablespoons tahini
- 1/2 lemon juice
- 1 teaspoon paprika
- 1 pinch salt
- 1 clove garlic
For the Rest:
- 1 baked Maitake mushroom
- Several onions
- 2 rolls
- 6 or 7 sage leaves
- Vegan cheese
- Oil
- Salt
Preparation
To Make the Hummus:
- Mix all of the ingredients for the hummus in a blender until they're smooth.
For the Maitake:
- Preheat the oven to 400ºF.
- Season the maitake with salt and pepper and put a little oil on the mushroom.
- Put it in the oven for about 20 mins
For the French Onion Soup:
- Cut several types of onion and sauté them for about 20 minutes with a little coconut oil.
- When they are with a golden color, add a little vegetable broth and let it cook for about 30 minutes.
- Remove some onion for the sandwich and crush up the rest in the broth to make a dip. Reduce it at a low heat if you want it to be a bit thicker.
For the Sandwich:
- Spread the rolls with hummus, lay the mushrooms and onions on top of that.
- Close it and dip away.
