Cooking Time



  • 1 1/3 cup almonds , whole
  • 1/3 cup lemon juice
  • 1/4 cup olive oil , cold-pressed extra-virgin
  • 3 cloves garlic
  • 1 1/4 teaspoon salt
  • 1/3 cup water + 4 teaspoons


  1. Put everything into a high-speed blender and blend until smooth.
  2. Leave in the fridge for a couple of hours to firm up if required.


If soaking almonds overnight, use 1 cup of water instead of 2 cups.
