Ingredients You Need for Ginger Garlic Chickpeas [Vegan]

  • ½ tablespoon coconut oil and extra for cooking
  • ¼ cup white vinegar
  • ¼ cup soy sauce/liquid aminos
  • 1 tablespoon maple syrup
  • 2 teaspoons ginger, chopped
  • ½ tablespoon cornstarch
  • ½ teaspoon crushed red pepper
  • ¼ teaspoon salt
  • 1 can of chickpeas (16 oz)
  • 2 large cloves garlic, chopped finely
  • cilantro, for topping (optional)

How to Prepare Ginger Garlic Chickpeas [Vegan]

  1. Mix coconut oil, white vinegar, soy sauce, syrup, ginger, and cornstarch together.
  2. Mix in chickpeas and marinate while doing the next step.
  3. Heat some oil in a pan. Fry the garlic until golden.
  4. Add in the chickpea mixture and cook until thick.
  5. Top with cilantro. (optional)
  6. Serve & enjoy!
