This feta cheese is made from chickpea flour and is an excellent topping for salads!
Feta Cheese [Vegan]
- 1/3 cup chickpea flour
- .85 cups of water
- 1 tablespoon oat flakes
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/2 teaspoon thyme
- 1/2 teaspoon oregano
- 2 tablespoon beer yeast
- Heat half the water in a saucepan until it boils.
- While the water is heating, mix the remaining ingredients in a bowl until a smooth mixture is left.
- Add the chickpea flour mixture in the boiling water and stir. Continue stirring for 1-2 more minutes until it is thick and pour the mixture quickly into a mold. Smooth the surface and cool in the refrigerator until the mixture is hard.
- Unmold the feta cheese and cut it into medium dice to serve in salads or simply with a little olive oil as an entree.
