Ingredients

  • Pita bread
  • 2 perini tomatoes
  • 4 radishes
  • 1/2 lettuce
  • 1 onion
  • 2 tablespoons extra-virgin olive oil
  • 1 handful parsley leaves
  • 4 leaves of mint
  • 1 tablespoon vinegar
  • 2 tablespoons extra virgin olive oil
  • salt to taste

Preparation

  1. Wash and dry all the vegetables and herbs. Cut the radishes into thin slices, the lettuce into strips, the tomatoes first in half and then into slices and slice the spring onion. Chop the parsley finely.
  2. With a kitchen scissors cut the pita bread into regular pieces.
  3. In a small and deep saucepan heat the oil and fry the pieces of bread a little at a time until they are golden, drain, let them dry on absorbent kitchen paper and sprinkle them abundantly with sumac, stirring to distribute it evenly.
  4. Place all the vegetables in a salad bowl, season with oil, salt and vinegar, add the parsley and the chopped mint. Add the fried bread and mix well, add a little 'sumac according to your tastes, let stand five minutes and serve.
  5. If you want a lighter dish, you can omit to fry the bread and opt for a roasting in the oven after having lightly seasoned with a little olive oil.
