  • 8 stalks of asparagus, halved
  • 1 teaspoon extra virgin olive oil
  • Salt and pepper, to taste
  • 4 slices of gluten-free bread
  • 4 tablespoons hummus of choice
  • 2 tablespoons vegan pesto
  • 4 artichoke hearts, halved

Preparation

  1. Preheat oven to 400°F.
  2. Place the trimmed asparagus on a baking sheet, drizzle it with olive oil and sprinkle it with salt and pepper.
  3. Roast it for 15-20 minutes, until asparagus is just starting to get crispy then, remove it from the oven.
  4. While asparagus is cooking, make your pesto, if desired. This is also a good time to toast your bread if desired
  5. Top 2 slices of bread with 1-2 tablespoons of hummus (each). Layer the roasted asparagus onto the hummus. Top 2 slices of bread with 1-2 tablespoons of pesto (each). Layer the artichoke hearts onto the pesto. Place two slices together (one pesto with one hummus).
