Use this Ingredient to Upgrade Your Vegan Ramen

A good ramen is all about the broth, according to a feature on vegan ramen in the New York Times. But, many broths are made with beef or chicken.

Tantanmen is the Japanese version of dan dan noodles, a Sichuan dish known for its sesame broth. Using the flavors of sesame in the broth brings a strong flavor that isn’t missing meat.

To make ramen with a flavorful broth without using meat, this recipe uses Chinese or Japanese sesame paste. This has a strong flavor than tahini, and the broth also includes soy sauce, rice vinegar, chile oil, and sugar.

Doubanjiang can also be added to increase the spiciness of the dish.
