Source: Stir Fry Kimchi Udon
When we first discovered the joys of kimchi, we became obsessed and started trying to incorporate it into as many dishes as possible. The fermented vegetable dish brings fantastic crunch, heat and excitement to every bite. Here we pair this Stir Fry Kimchi Udon by Tiffani Thompson and Larone Thompson with thick, chewy udon, which creates a nice contrast in textures. The recipe also calls for kimchi juice, the liquid that is in the jar alongside the cabbage. You might have to go to an Asian foods market to track down a good-quality kimchi, but I think you’ll agree that it’s worth it.

This tofu chick’n has a crispy exterior with a divine sticky orange sauce coating. This Orange Chick’n by Llyod Rose is sweet and spicy and very addictive. The orange zest is truly the ingredient that makes this dish special with high notes of citrus. I remember when I created this recipe, I made it for three days straight for others to try because it was just too good. I promise if you made a top five list of all the recipes inside this book, this Orange Chick’n would make the list! Reprinted with permission from Crazy Good Vegan by Lloyd Rose. This High Protein Edamame Fried Quinoa Rice by Crissy Cavanaugh lightly flavored but easily adapted to what levels of flavor you prefer, while the vegetables are easily changed according to what’s in season. Best of all, this is a quick and easy meal that won’t leave you hungry!

Source: Creamy Dumpling and Butter Bean Stew
This warming stew has an incredible amount of flavor, texture, and richness. The soft and fluffy dumplings in this Creamy Dumpling and Butter Bean Stew by Maria Gureeva are a unique twist and practically melt in your mouth. They were inspired by a dumpling soup my grandma always made for me. Garnish the finished stew with a fresh herb of your choice, such as dill or basil, and you certainly will not be disappointed.
