Curried Carrot Ginger and Orange Soup [Vegan]

Ingredients

  • 1 Tbsp coconut oil
  • 1 cup sweet onion, diced
  • 3 cloves garlic, minced
  • 1 Tbsp ginger, minced
  • 1 tsp curry powder
  • 1/2 tsp salt
  • pinch fresh ground pepper
  • 2 lbs carrots, roughly chopped
  • 3 cups vegetable stock
  • 1 cup fresh orange juice

Preparation

  1. In a large sauce pot, heat coconut oil over medium heat.
  2. Add onions and cook until translucent.
  3. Add garlic, and ginger, and cook a couple of minutes longer.
  4. Add carrots, curry powder, salt, and pepper.
  5. Add vegetable stock and orange juice and bring to a boil.
  6. Once boiling, turn down to a simmer for about 20 minutes, until carrots are tender.
  7. Use an immersion blender to blend soup, or let cool and use a regular blender. Blend until smooth.
