Israeli startup DairyX has made a breakthrough in producing dairy cheese without using cows by developing yeast strains that produce the essential proteins found in milk. The key protein, casein, is what gives traditional dairy products like cheese and yogurt their stretchy and creamy textures. While some say that many plant-based cheese alternatives have struggled to match these qualities, DairyX believes it has achieved a critical step in replicating the textures dairy lovers crave. However, there are still great vegan cheeses available.
The environmental impact of cattle farming is a major issue due to methane emissions and habitat destruction. For this reason, many companies are searching for more sustainable alternatives to traditional dairy. While plant-based foods and lab-grown meats have been at the forefront of these efforts, DairyX is exploring a third option: precision fermentation. The company uses yeast strains engineered to produce casein proteins that are genetically identical to those found in dairy milk.
DairyX founder and CEO Dr. Arik Ryvkin explained that people have been attempting to remove cows from dairy production since the 1970s. Early efforts relied on plant proteins, but recent biotechnology advances have paved the way for more sophisticated approaches. Companies like Perfect Day pioneered the field, and DairyX is now advancing the process by creating casein proteins that can self-assemble into the tiny structures known as micelles. These micelles are what give dairy cheese its distinctive properties.
In addition to mimicking the texture of dairy cheese, DairyX’s casein proteins eliminate the need for the hormones and antibiotics typically used on dairy farms. The company is now scaling up its production and hopes to gain regulatory approval for its products by 2027. Once approved, these proteins could be used by cheese and yogurt manufacturers as a direct replacement for dairy milk, requiring no changes to their production processes.
DairyX is one of several companies working on cow-free dairy proteins. New Culture in the U.S. is developing mozzarella using similar fermentation methods, while Australian company Eden Brew is focusing on milk production. Other companies, such as NewMoo in Israel and New Zealand’s Daisy Lab, are exploring different techniques for producing dairy proteins without animals.
Preliminary studies suggest that DairyX’s precision fermentation method could reduce greenhouse gas emissions by as much as 90% compared to traditional dairy production. This reduction is possible if the leftover yeast from the process is reused, potentially as food ingredients. Even without this reuse, emissions would still be cut by about 50%, and the process requires significantly less land and water than animal-based dairy production.
Ryvkin, a former vegan, was inspired to develop this technology after struggling to find satisfying vegan cheese alternatives. He eventually abandoned his vegan diet due to the lack of quality cheese options, but he was determined to find a solution for others. Now, with DairyX, he aims to make cow-free cheese a viable option for everyone. Ryvkin emphasized that reaching price parity and matching the taste of traditional dairy products are essential for the technology’s success.
DairyX’s breakthrough represents a significant step forward in creating sustainable, animal-free dairy products that could help reduce the environmental impact of food production while still delivering the textures and flavors consumers love.
