The world of plant-based eating is drastically different from what it was 10 years ago. In the past, the best we could manage, outside of our own kitchens, was a bland veggie burger or the occasional tofu dish. These days it seems that every niche food market has its vegan equivalent. From memory, I can think of three vegan soul food restaurants, more than a few meatless Chinese food places, various animal-free bakeries and even a vegan pizza shop. It seems strange, with all of these options, that the occasional sushi outing always ends in a standard avocado maki roll made with bland white rice.
But now, thanks to Executive Chef and Hell’s Kitchen alumni Guy Vaknin, you can enjoy a variety of delicious, healthy vegetarian sushi options. Beyond Sushi just opened its first restaurant location in New York City, at 229 East 14th street between 2nd and 3rd ave.
According to Chef Guy there has been a hole in the health food industry: “I wanted to offer consumers a wholesome, vitamin rich sushi roll, nixing the white rice and added sodium.” So Guy will be doing away with the typical, nutrient-poor white rice in favor of healthier forbidden and 6-grain rice blends.
For effect, I’m just going to rattle off some of their signature tofu and veggie sauces and let your taste buds get your legs moving: jalapeno-wasabi, toasted-cayenne, carrot-ginger, shitake-teriyaki, mango-chili, and white-miso!
If all of the options seem a little overwhelming, I find it’s best to trust the man who made the food; Guy’s favorite dish on the menu is the Spicy Mango! This amazing roll is made with black rice, avocado, mango, English cucumber, and his special spicy vegetable mix.
And Beyond Sushi even gets bonus points for its environmentally-friendly building design! The trendy building, designed by Atal Group, was constructed using recycled materials. The clean, green, and modern space has has a 200-year-old framework, accented with wood, exposed brick, and functional concrete floors.
