Ingredients You Need for White Bean Cinnamon Muffins [Vegan]

  • 1 ripe banana (crushed with a fork)
  • 1 15-ounce can boiled white beans, washed and drained
  • 1/2 cup oatmeal
  • 2 tablespoons coconut flakes
  • 1/4 cup favorite syrup (date, maple, etc.)
  • 1/6 teaspoon of baking soda
  • 2/3 teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • 1/3 teaspoon of vanilla powder
  • 2 to 3 tablespoons of crushed cocoa beans (or other favorite crushed nuts)

How to Prepare White Bean Cinnamon Muffins [Vegan]

  1. Preheat the oven to 375°F.
  2. Blend all the ingredients with a blender, except cocoa beans, which should be added at the end. Mix well. Transfer the mass to the muffin molds. This recipe made 9 muffins.
  3. Bake about 20-25 minutes. Muffins should be slightly soft. Before serving, they can be sprinkled with a small amount of icing sugar with cinnamon.

  1. Y\’all, I\’m pretty sure that muffin recipe either was not tested or else was transcribed incorrectly. Like, whoever heard of "1/6 tsp of baking soda" and "2/3 tsp of baking powder?" The picture shows nice rounded tops, but after 20 minutes in the oven mine looked like craters. Recipe said bake 20 to 25 minutes, but mine needed 55 minutes to get the insides to set. Of course by that time the outsides were super dark. Don\’t like to waste food, so I chopped them up and served them as warm chunks on top of vanilla ice cream. My guests had a sense of humor – we agreed that as muffins they failed, but chunked over ice cream they were strangely satisfying . I am an experienced baker and did follow the recipe closely except for having to estimate fractions of teaspoons for the leavening.
