Ingredients You Need for No-Bake Fig Frangipane Tart [Vegan, Gluten-Free]

For the Base:

  • 7 ounces dried figs, soaked in water for at least 3 hours
  • 7 ounces mixed nuts (Brazil nuts, pistachios, walnuts, macadamias, etc...)
  • Raspberry jam, for topping

For the Tart:

  • 2 1/2 cups, plus 1 3/4 tablespoons ground almonds
  • 2 teaspoons almond extract
  • 2 bananas, mashed

How to Prepare No-Bake Fig Frangipane Tart [Vegan, Gluten-Free]

To Make the Base:

  1. Put the nuts into a food processor and pulse until they become a crumbly mixture (don’t pulse them too fine). Then, add the soaked figs and pulse again until it forms a dough-like texture.
  2. Press it down into a tin to create the base of the tart and pop into the freezer for a few minutes.
  3. After a few minutes has passed, spread a layer of jam over the base. Raspberry is recommended because the tartness of raspberries naturally complements the sweetness of dates.

To Make the Tart:

  1. Mix the ingredients together and then layer on top of the frozen jam layer. Add a few dried or fresh figs to decorate, if you like. Return to the freezer for a couple of hours, or until you’re ready to eat it.
  2. Or, if you’re really short of time, you could just refrigerate the tart for at about an hour and then serve it. You can leave it in the refrigerator for longer than an hour, but it will taste more like bananas the longer you leave it.
