These simple sweet bites are the perfect treat to put out at the end of a party because they look fantastic but are very easy to make. The sweet frozen base is cut by the cool mint and finished off with an elegant chocolate drizzle.

Ingredients You Need for Icy Mint Creams [Vegan, Gluten-Free]

  • 4 cups almond milk
  • 1 cup sugar
  • 1/4 cup soaked cashews, macadamias, or coconut meat
  • 1 teaspoon mint extract or more to taste
  • Melted vegan chocolate
  • Fresh mint leaves (optional)

How to Prepare Icy Mint Creams [Vegan, Gluten-Free]

  1. Freeze four cups of almond milk overnight.
  2. The next morning, let it thaw until the frozen milk can be taken out.
  3. Add it to a blender with a splash more of milk, sugar, cashews and mint.
  4. Blend all the ingredients on low, scraping down the sides in between blending, then blend them on medium.
  5. Pour the frozen mix into a mold tray and freeze it for a few hours, then drizzle it with chocolate and freeze it for a few more hours.
