Roasted Vegetables With Jalapeno Ginger Jelly [Vegan]

Use our Jalapeno Ginger Jelly to add a zesty and unique glaze on your favorite combination of roasted vegetables. This lemony, gingery, slightly sweet and spicy jelly brightens the flavors of the roasted vegetables to make a truly different and delicious dish. We have used brussels sprouts and butternut squash in this recipe, but you may substitute broccoli, cauliflower, carrots, cabbage or asparagus.

Roasted Vegetables with Heat Sweets Jalapeno Ginger Jelly

This Recipe is :

Dairy Free Vegan




  • 1 LB brussels sporuts, cleaned and cut in half
  • 1 LB Butternut Squash, pealed and diced into 1″ cubes.
  • 2 TBLS olive oil
  • 4-5 TBLS Jalapeno Ginger Jelly
  • Salt and pepper to taste


  1. Heat over to 400 F.
  2. Toss brussels sprouts and butternut squash cubes in a bowl with the olive oil, salt and pepper
  3. Spread on baking sheet in a single layer.
  4. Roast in over for about 20-25 minutes, stirring once, until the edges are just beginning to get crisp and brown.
  5. Return brussels sprouts and butternut squash to the bowl.
  6. Stir in Jalapeno Ginger Jelly.
  7. Transfer vegetables to the serving dish
  8. Serve immediately

To make the crust: put the oats and almonds into a high speed blender and blend until it turns into a thick, slightly crumbly paste. If needed or desired, add a little maple syrup, then press into two tartlet molds or whatever shapes/molds you like. Put in the fridge. To make the lemon coconut cream: put the coconut and cashews into your high speed blender and blend until it turns into a thick paste/butter. Stir in a 1/4 cup lemon juice and the maple syrup until evenly combined (or blend it in). If you'd like more lemon flavour, add more lemon juice! I like mine quite tart - no pun intended, seriously - so I used a full 1/2 cup. Spread this mixture evenly into your crusts, then let them sit in the fridge overnight or for at least a couple hours so the flavours can get to know each other. Garnish with mint, basil, lemon zest, maple syrup or whatever else you like! Life is good!
