This is the last birthday cake recipe you will ever need. No matter how old you're turning, you will want a slice of this cake. Banana and chocolate layers with a fluffy chocolate coconut buttercream ... yeah, it's real life.

Ingredients You Need for Ultimate Banana Chocolate Birthday Cake [Vegan]

For the Banana Cake:

  • 
1/4 cup almond milk
  • 1/3 cup melted coconut oil
  • 1/2 cup pure maple syrup
  • 
1 teaspoon pure vanilla extract
  • 4 mashed bananas
  • 2 cups spelt flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 
1/2 teaspoon sea salt

For the Chocolate Cake:

  • 2 cups spelt flour
  • 1/2 cup unsweetened cocoa powder
  • 
2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 
1 cup pure maple syrup
  • 1 cup almond milk
  • 1/3 cup melted coconut oil
  • 2 teaspoon pure vanilla extract

How to Prepare Ultimate Banana Chocolate Birthday Cake [Vegan]

To Make the Frosting:

  1. Refrigerate coconut milk overnight.
  2. Open can and scoop out only the hard cream, discard the liquid or use in soups or smoothies.
  3. Heat a small saucepan on medium heat and add coconut cream and chocolate chips. Heat until chocolate is melted and mixture is smooth.
  4. Remove from heat and refrigerate for 2-3 hours.
  5. Stir frosting (it will be quite hard at first) and then whip until desired texture is reached.

For the Banana Cake Layer:

  1. Preheat oven to 350°F
  2. Lightly oil and dust an 8-inch round spring form cake pan with flour, shaking out excess.
  3. Put the milk, oil, maple syrup, vanilla, and bananas in a blender and blend until smooth.
  4. In a large bowl combine dry ingredients. Add banana mixture and combine.
  5. Pour batter into cake pan and smooth the top. Place in the oven and bake until a toothpick inserted in the center comes out clean (approximately 60 minutes).
  6. Let cool.
For the Chocolate Cake: 
  1. Preheat the oven to 350°F.
  2. Lightly oil and dust an 8-inch round spring form cake pan with flour, shaking out excess.
  3. In a large mixing bowl, sift together the flours, cocoa, baking powder, baking soda, and salt. Whisk to combine.
  4. In a separate bowl combine the maple syrup, milk, coconut oil, vanilla. Whisk to combine. Pour the wet ingredients into the dry ingredients and whisk to remove any lumps
  5. Pour batter into cake pan and smooth the top. Place in the oven and bake until a toothpick inserted in the center comes out clean (approximately 60 minutes).
  6. Let cool.

To Assemble the Cake:

  1. Carefully cut each cake into two with a sharp knife.
  2. Spread approximately 1 tablespoon of frosting in between in layer, and add frosting to cover top. Add any garnishes you wish and enjoy!
