Top it on a gyro, falafel, nachos, sandwiches, veggies or even spread it on warm pita bread… you can eat this classic Greek appetizer on almost anything! This is a veganized version that tastes just like the authentic one. It’s delicious and it’s super simple to make!
- 1 cup plain vegan yogurt
- 1/4 cucumber (grated)
- 1 tablespoon fresh dill
- 1 teaspoon lemon zest
- 1 tablespoon nutritional yeast
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 clove of minced garlic
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Combine all the ingredients into a medium-sized mixing bowl.
- Stir together.
- Pour into a serving dish, cover tightly, and refrigerate for up to 1 hour before serving.
Tastes even better if you refrigerate it overnight!
