Ingredients You Need for Tofu ‘Chicken’ [Vegan, Gluten-Free]

  • 8.8 ounces dried yuba (tofu skins)
  • 5 tablespoons cornstarch
  • Approximately 4 1/4 cups boiling water
  • 1 teaspoon poultry seasoning or barbecue
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoons sugar
  • Salt and pepper, to taste
  • Olive oil and spices of your choice, to marinate
  • Dishcloth, thin rope, and a colander

How to Prepare Tofu ‘Chicken’ [Vegan, Gluten-Free]

  1. Dissolve 1 teaspoon salt and 2 teaspoons sugar in boiling water. Soak the yuba in the water, add the vinegar, and stir for one minute until the yuba softens slightly. Let soak several hours or overnight.
  2. Drain the yuba and remove the excess water by squeezing with your hands.
  3. In a bowl, mix well-drained yuba with seasoning, onion and garlic powder, and cornstarch.
  4. On a flat surface, lay a dish towel or a piece of cloth flat and put the yuba in the center. Tightly wrap in the cloth and tie tightly with rope or thick thread. You need to use a large amount of rope to wrap the yuba completely and to squeeze out more excess water.
  5. Steam the wrapped yuba for an hour either in a steamer or place in a colander on top of a boiling pot. Let cool and unwrap.
  6. Marinate the yuba (best cut into pieces) for several hours in olive oil with salt, pepper, seasoning, or savory spices.
  7. It can be consumed raw, grilled, or roasted.
