Ingredients

Base:
  • 1 1/2 cups almonds
  • 1 cup dates
  • 1 teaspoon vanilla extract (optional)
Middle Layer:
  • 1 cup soaked cashews
  • 1 cup water
  • 1/2 cup frozen raspberries
  • 2 tablespoon coconut oil
  • 2 tablespoon agave syrup
Top Layer:
  • 1 cup frozen raspberries
  • 1 tablespoon agave syrup
  • 3 tablespoons water
  • 1 teaspoon melted coconut oil

Preparation

  1. In a food processor add all of the base ingredients together and pulse until everything is combined and the mixture forms a sticky ball.

  2. Line a deep baking tray with baking paper.

  3. Pour the base mixture into the tray evenly and use your hands to press the mixture down.

  4. Pop the tray into the freezer while you prepare the next layer.

  5. In a blender add the middle layer ingredients. Blend until everything is combined and you have a smooth silky consistency.

  6. Pour the middle layer over the base and pop back into the freezer for one hour.

  7. In a food processor add all of the top layer ingredients and pulse until it becomes a smooth consistency. Spread over the middle lay and pop back into the freezers for another two hours.

  8. Once the mixture has frozen take out of the freezer and slice into bars.
