Ingredients You Need for Pepper, Onion, and Sweet Corn Open-Faced Sandwich With Smoked Almond Cheese [Vegan]

For the Smoked Almond Cheese:

  • 1/2 cup water
  • 1 cup ground almonds
  • 1 teaspoon salt
  • 1 1/2 tablespoons nutritional yeast (optional)
  • 1/2 teaspoon smoked paprika
  • A dash of pepper
  • 2 teaspoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

For the Topping:

  • 1 red bell pepper
  • 1/2 red onion
  • 1/2 cup sweet corn

For Assembly:

  • Bread of your choice, enough for 5 sandwiches

How to Prepare Pepper, Onion, and Sweet Corn Open-Faced Sandwich With Smoked Almond Cheese [Vegan]

  1. Preheat the oven to 355°F.
  2. In a blender, combine all almond cheese ingredients and blend until smooth.
  3. Finely chop the red bell pepper and mix together with the sweetcorn. Cut the onion into rings.
  4. Put the bread on a baking tray lined with aluminum foil or baking paper and spoon the almond cheese onto it. Then, add the red pepper onion topping and place a few onion rings on top. Add a dash of salt and pepper on each one and bake in the oven for 10-15 minutes.
