Paratha is an Indian flat bread that is stuffed with a savory filling. This bread is crispy on the outside and filled with a potato and cauliflower filling that is bursting with flavor and spices. It makes for a great snack or a quick lunch on the go.

For the Dough:

  • 4 1/3 cups raw buckwheat flour
  • 3 1/2 tablespoons chickpea flour
  • 1 teaspoon Himalayan salt
  • 1 teaspoon cumin, crushed
  • 1 2/3 cups water

For the Filling:

  • 3 medium potatoes, cut into cubes
  • 5.3 ounces cauliflower, processed or grated
  • 1/4 red bell pepper, chopped
  • 3/4 teaspoon Himalayan salt
  • Black pepper and chili flakes to taste
  • A handful of fresh coriander, chopped

How to Prepare Paratha: Potato-Cauliflower Stuffed Flatbread [Vegan, Gluten-Free]

  1. Mix the batter ingredients and knead them for 10 minutes. The dough should be a bit sticky. If the dough doesn’t come off your hands at all, add a bit of flour.
  2. Cover it with a kitchen towel and leave it to rest for 30 minutes.
  3. Prepare the filling by boiling potato cubes until they're soft.
  4. Drain the excess water and mash them.
  5. Mix in the remaining ingredients.
  6. Divide the dough into six equal pieces and the filling into six equal portions.
  7. Flour a non-stick surface. Take one piece of dough, form a ball, and then a thick flat circle by patting and shaping it at the same time.
  8. Roll the dough out into a large circle (about 8-9 inches diameter).
  9. Put one portion of filling in the center and spread it out leaving a good 2-inch border.
  10. Fold the dough into the center making 5-6 folds around the paratha bringing the outer edge to the center.
  11. Gently roll the paratha again to get a circle of about 6-6 1/2 inches in diameter.
  12. Repeat the process with the remaining dough balls and filling.
  13. Fry the paratha, without oil, until they're golden on both sides or bake them at 350°F for 20 minutes flipping the parathas at 10 minutes.
