Ingredients You Need for No-Bake Banana Coconut Cream Pie [Vegan]

For the Crust:

  • 2 cup walnuts
  • 1 cup oats
  • 6 dates
  • 1 1/2 tablespoons maple syrup
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cinnamon
  • A dash of salt

For the Filling:

  • 1 banana
  • 1/2 cup coconut cream
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup cashews, soaked for 2 hours
  • 2 tablespoons maple syrup
  • A dash of salt
  • Cocoa powder and extra shredded coconut for the topping (optional)

How to Prepare No-Bake Banana Coconut Cream Pie [Vegan]

  1. First, make the crust. In your food processor, chop the dates until they are finely chopped. Next, add the remaining ingredients until they are the consistency of dirt. Press the mixture into your pie pan.
  2. Next, purée all the ingredients of the filling in your food processor. Once it is nice and smooth, pour the mixture onto the crust.
  3. Feel free to sprinkle a little extra shredded coconut and cocoa powder on the top of pie.
  4. Let it set in the freezer for about an hour before cutting. You can leave it in there longer, but let it thaw for 15-20 minutes so it is easier to cut into.
