These vegan mint chocolate cookies are phenomenal! The perfect treat to sweeten your day. Make an extra batch because they're a crowd pleaser! Made with just eight simple ingredients, you can throw these together in a flash (they might be gone just as fast!)

Mint Chocolate Cookies [Vegan]



  • 2.5 ounces dairy free butter
  • 1.75 ounces dark brown sugar
  • 1.75 ounces caster/granulated sugar
  • 4 ounces plain flour
  • 2 teaspoon cacao powder
  • 3 tablespoons dairy free chocolate milk
  • 1 teaspoon vanilla extract
  • 3.5 ounces mint-flavored dark chocolate; either chocolate chips or roughly chopped chocolate


  1. Pre-heat the oven to 350°F and line a large baking tray with baking paper
  2. Start by adding the butter and both sugars into a mixing bowl and whisk/blend until the mixture is creamed
  3. Then add in the milk and vanilla extract and mix again
  4. Fold in the flour and cacao powder until all the mixture is combined and a cookie-dough has formed
  5. Add 3/4 of the chocolate into the mixing bowl and gently combine into the mixture
  6. Split the mixture into 8 blobs on the baking tray, then flatten slightly until they’re about 5cm width (they will spread when in the oven)
  7. Add the rest of the chocolate to the top of the cookies evenly, then place in the oven for 14 minutes
  8. When 14 minutes has elapsed, take the cookies out of the oven- leave them for 10-15 minutes and during this time they’ll harden a little on the outside (and stay gooey on the inside)
